07 May Outstanding Bar! Charles Joly & The Aviary Win James Beard Award
Nominated alongside fellow top-notch Chicago cocktail lounge, The Violet Hour, this only makes obvious to the rest of the planet what we already know: Chicago’s professional bartenders are among the best in the world.
As you know if you’ve been there, Joly and the stellar team at The Aviary break new ground daily. They do more than produce well-made cocktails with excellently-sourced ingredients–they push the boundaries of how those drinks are served. It’s as close to modern culinary magic as you’re going to see and to be expected since The Aviary is an offshoot of Alinea, one of the world’s top restaurants operated by chef Grant Achatz here in Chicago.
Also, HUGE congrats to Chicago chef Paul Kahan (Blackbird, AVEC, Big Star, The Publican), who brought home “Outstanding Chef” honors, sharing the title with chef David Chang of Momofuku Noodle Bar in New York City. Mr. Kahan is as humble and kind as he is talented, and yet another stellar example of what makes Chicago great.
